This recipe requires a little more effort than others in this collection -- the color cubes need to be made a day in advance. But remember, Freedom isn't Free! "Patriotic Pie" is essentially a sour-cream cheesecake with red and blue cubes of Jell-O. You can also prepare it in a springform pan rather than using two prepared piecrusts, but "Patriotic Springform" just didn't have the same ring to it. |

Color Cubes: 1 package (3 oz.) each Jell-O Strawberry and Berry Blue Gelatins 2 cups boiling water 1 cup cold water Cheese filling: 8 oz cream cheese, softened 8 oz sour cream 1 package unflavored gelatin 1 cup cold water 1/2 cup sugar 2 9-inch graham cracker crusts Prepare the two flavors of gelatin separately, using 1 cup boiling water and 1/2 cup cold water for each. Pour each flavor into an 8-inch square pan. Chill overnight. When firm, cut into approximately 1/2 inch cubes. In large bowl, blend sour cream, sugar, and softened cream cheese. In small saucepan, sprinkle unflavored gelatin over 1/4 cup cold water and let rest one minute. Heat gently a few minutes until gelatin is dissolved. Add gelatin mixture and remaining 3/4 cup cold water to sour cream mixture, and blend until smooth. Fold color cubes into sour cream mixture and pour (or ladle) into prepared graham cracker crusts. Let chill in refrigerator five hours before serving. |
