Pineapple Cheese Molds |
1 package (3 oz.) Jell-O Lemon, Orange-Pineapple, or Lemon-Lime Gelatin 1 cup boiling water 1 can (8 3/4 oz) pineapple tidbits or crushed pineapple 1 cup cottage cheese 1/2 teaspoon grated onion 1/4 cup chopped nuts Dissolve Jell-O Gelatin in boiling water. Drain pineapple, measuring 1 cup syrup; add cold water if necessary. Add to gelatin. Chill until very thick (about 1 1/2 hours). Then add cheese, pineapple, onion, and nuts. Pour into individual molds or a 1-quart mold. Chill until firm. Unmold on crisp greens. Serve with additional cottage cheese, if desired. Makes about 3 2/3 cups, or 6 to 8 side salads. |
