Hi Chef Andy! Please help me!

I fondly remember a pistachio cake made with Jell-O pistachio pudding mix and I can't find a recipe for it anywhere. It also has a frosting made with the pudding mix. The cake has the consistency of traditional pound cake. I have looked almost everywhere to no avail. Thank you for any information you might be able to dig up.

No problem! Let me whip out my copy of Kraft's Celebrating 100 Years of Jell-O cookbook, and here we go! The recipe maintains that the green food coloring is optional...Chef Any says, "No Way!" After all, as long as you're cooking with Jell-O (even though this recipe uses Jell-O brand pudding, and not Jell-O brand gelatin) one should take full advantage of any chance to use artificial colors! Extra green food coloring makes this cake the perfect dessert for St. Patrick's day!

Pistachio Pudding Cake
Pistachio Pudding Cake

1 package (2-layer size) yellow cake mix
1 package (3 oz.) Jell-O Brand Pistachio Flavor Instant Pudding & Pie Filling
4 eggs
1 1/4 cups water
1/4 cup oil
1/2 teaspoon almond extract
7 drops green food coloring
dusting of powdered sugar

Preheat oven to 350 F.

Place all ingredients except powdered sugar in large bowl.  Beat with
electric mixer at low speed just to moisten.  Beat on medium speed 4 minutes.
Pour into greased and floured 10-inch fluted tube or tube pan.

Bake 50 to 55 minutes or until toothpick inserted in center comes out clean.

Remove cake from oven.  Cool 15 minutes; remove from pan.  Cool completely
on wire rack.  Dust with powdered sugar just before serving.

Makes 12 servings.
